Fish Pie

Fish Pie

The dinner of choice tonight was fish pie. A simple dish that is perfect for cooking when you are away from the usual comforts of your home kitchen.

This is yet another of my dishes where there really is a lot of opportunity to mix and match ingredients, there really is no right or wrong. I would always recommend adding some type of smoked fish, I normally use Smoked Haddock (i prefer non-dyed but was unable to get this for todays pie).

Sausage & Bean Casserole

Sausage & Bean Casserole

This is one of those recipes that never disappoints, what my old man used to call ‘stick to your ribs food’ – This is a dish that is so simple, but so rewarding in terms of big, robust flavours and is loosely based around the French classic, Cassoulet. What’s more it is cheap as chips to make and all I would recommend is getting the best quality sausages you can find.

Focaccia

Focaccia

This simple recipe for homemade Foccacia will blow your mind – infinitely better than anything you can buy from the supermarket or even a lot of local producers.

The secret to success here, as with many bread recipes is time. To get a really great finished result, don’t rush it!

Leftovers – Shepherds Pie

Leftovers – Shepherds Pie

In terms of cooking, one of my favourite things is looking in the fridge and cupboards midweek, and putting together a wholesome family meal, using up leftovers and those half packets of weird and wonderful food items. This is my most recent efforts which I thought was worth sharing. Homemade Leftovers Shepherds Pie.

The Fish Shack – Amble

The Fish Shack – Amble

The Fish Shack is a hidden gem in the fishing town of Amble, situated on the gorgeous Northumberland coast. A great selection of locally caught fish is on the menu and dished up to perfection. Definitely worth a try!
